All parts are edible. However, you should boil it, fry it or deep-fry it.

No, mushrooms should not be eaten raw. Always boil, bake or deep-fry them.
How do you cut shiitake?
Remove the stalks from the shiitake. (In soups and sauzem you can also use the stalks, they are edible). Halve or slice the cap of the shiitake. There is no need to cut small ones.
How do you know if shiitake are still good?
If so, the mushrooms are limp, mouldy or give off a sour smell. You can recognise decay by looking closely, smelling or tasting a little.
