Purple sweet potatoes are root vegetables. The purple sweet potato (Okinawan) is also known as Hawaiian Sweet Potato, and is originally part of the indigenous menu in Hawaii. Okinawan sweet potatoes have a beige outer skin and a deep, blue-purple flesh. The tubers are pointed at both ends. We also have the sweet potatoes in white and orange.

How to prepare

Purple sweet potatoes (sometimes wrongly called purple yams) are fun to cook with and can be used in many of the same ways as the more familiar orange or white sweet potatoes. Although some varieties have a white skin, cutting open one of the varieties will reveal their violet surprise. They are popular in Asian and Latin cuisines. They add a brilliant color to food and require only a few adjustments to cook.
