Bring a pan with water to a boil and cook the penne pasta for 10 to 12 minutes.

While the pasta is cooking prepare the M. grey oyster mushrooms by tearing them apart and put them together, in a bowl, with the M. mini Eryngii mushrooms.

Cut 1 white onion and 1 M. mini garlic in small blocks. Also slice the 6 Cherry tomatoes in half and finely chop the basil.

Add a drizzle of olive oil to a pan and fry the onion and garlic for 2 minutes.

Add the mushrooms and the Cherry tomatoes to the pan and fry them for another 2 minutes with salt and pepper to taste.

Add the 350gr of tomato sauce or Passata with a pinch of sugar and let it cook for 2 minutes.

Add the chopped basil, cook for 1 more minute and add the cooked pasta. Mix it all really well.

Finish it with a drizzle of Balsamic vinegar syrup (optional) and Parmesan cheese.
